Ingredients

  • 1 1/2 tbsp unsalted butter
  • 1 pound green cabbage (about half a large cabbage)
  • 8 oz pasta (I used Campanelle)
  • 4 cloves garlic

Instructions

Prep the pasta and cabbage

  • Bring a large pot of heavily salted water to a boil and cook the pasta according to package directions until al dente. Before draining, reserve a generous splash of the starchy cooking water to help emulsify the sauce.
  • While the pasta is boiling, thinly slice the green cabbage into ribbons. Aim for a width similar to your pasta shape to ensure even distribution in every bite.

Char the cabbage

  • Melt the unsalted butter in a large skillet over medium heat until it foams. Add the minced garlic and sliced cabbage ribbons.
  • Cook the cabbage, stirring frequently, until it softens and develops deeply browned, charred edges. This caramelization is essential for a sweet and savory flavor profile.

Finish the lemon Alfredo sauce

  • Reduce the heat to low. Stir in the heavy cream and lemon zest, allowing the residual heat to warm the cream without boiling it.
  • Add the drained pasta to the skillet. Toss everything together, adding the reserved pasta water as needed until the sauce becomes glossy and coats the noodles and cabbage perfectly.

Serve with crunch

  • Divide the pasta into bowls and top immediately with spicy toasted breadcrumbs and freshly grated Parmesan cheese.

Notes

Chef's Flavor Secret: Always use lemon zest instead of juice when working with hot cream. The citrus oils provide incredible aroma and flavor without the acidity that causes dairy to curdle or split.
Emulsion Tip: Don't skip the pasta water. The starch acts as a binder between the butter, cream, and pasta, creating a professional, silky finish that clings to the cabbage ribbons.
Storage & Reheating: Store leftovers for up to 3 days in the fridge. Reheat gently in a skillet over low heat with a splash of milk to restore the creamy texture without making it greasy.
