Blackberry Champagne Mule

A bright, bubbly cocktail with blackberries, mint, lime, ginger beer, vodka, and champagne. It comes together fast and feels festive with very little effort.

Ingredients
 

  • 1/4 cup fresh or frozen blackberries
  • 8 leaves fresh mint plus more for topping
  • juice from half of a lime
  • 1 1/2 ounces vodka
  • 2 ounces ginger beer chilled
  • champagne chilled, for topping

Instructions
 

  • In a cocktail shaker or glass jar, muddle the blackberries, mint, and lime juice, squashing everything to release the juices. Add the vodka. Fill with ice and shake until combined.
    Press firmly enough to break down the berries and wake up the mint, but don’t grind the mint into paste. You want it bruised, not pulverized. Once the vodka and ice go in, shake until the outside of the shaker feels frosty. That’s my favorite cue that the drink is well chilled and ready.
  • Strain into a champagne or wine glass with ice. Add the ginger beer and top with the champagne. Garnish with mint. Drink and enjoy!
    Straining keeps the sip smoother, while the ginger beer adds that spicy mule backbone. Pour the champagne gently so the bubbles stay in the drink instead of foaming away on the counter. The aroma right before the first sip is the best part: mint first, then ginger, then a little berry.

Notes

Technique Tip: Press the mint lightly so it releases aroma without turning bitter. If you want a smoother drink, double strain through a fine mesh sieve before adding the bubbly.
Serving Tip: Keep the ginger beer, champagne, and even the glass very cold. Add the sparkling ingredients at the end and pour gently to help the drink stay crisp and fizzy.
Make Ahead Tip: You can prepare the muddled blackberry, mint, lime, and vodka base in advance and chill it. Finish each glass with ice, ginger beer, and champagne right before serving.
Variation: Try raspberries, strawberries, or blueberries in place of blackberries. Sparkling rosé or another dry sparkling wine can stand in for champagne, and elderflower liqueur adds a floral note.
