Ingredients
 

Black Velvet Cake

  • 2 Cups all purpose flour 265g
  • 1 2/3 Cups granulated sugar 340g
  • 2/3 Cup black cocoa powder 80g
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 Cup vegetable oil 120ml
  • 2 large eggs room temperature
  • 1 1/2 tsp pure vanilla extract
  • 1 Cup full-fat buttermilk 240ml, room temperature
  • 1 Cup hot coffee or hot water 240ml

Dye-Free Black Buttercream

  • 2 Cups unsalted butter 452g, room temperature
  • 5 Cups powdered sugar 600g
  • 1 Cup black cocoa powder 112g
  • 4 Tbsp whole milk room temperature
  • 2 tsp pure vanilla extract
  • 1/4 tsp salt or to taste

Instructions
 

Prep the pans and build the dry base

  • Heat the oven to 350ºF. Grease three 6-inch or two 8-inch cake pans and line the bottoms with parchment paper circles to ensure a clean release.
  • Add the flour, sugar, black cocoa powder, baking soda, baking powder, and salt to your stand mixer bowl. Stir on low for 30 seconds until the color is even and shadowy.

Mix the batter, then bloom with heat

  • Pour in the vegetable oil, eggs, vanilla, and buttermilk. Mix on low just until the dry streaks disappear and the batter looks glossy and thick.
  • While keeping the mixer on low, slowly stream in the hot coffee or hot water to bloom the cocoa. Increase speed to medium and beat for about 2 minutes until the batter is smooth, inky, and thin.

Bake, cool, and keep that crumb tender

  • Divide the batter between the prepared pans, filling them no more than 2/3 full. Bake for 32 to 36 minutes until a toothpick comes out clean. Cool the layers completely before frosting.

Whip the buttercream, then assemble and chill

  • Whip the butter on medium for 4 minutes until creamy and light. Add the powdered sugar in two batches, mixing on low. Sift in the black cocoa, then add vanilla, milk, and salt. Mix on low for 2 minutes until silky.
  • Level the cooled cake layers. Stack and fill with buttercream, apply a crumb coat, and refrigerate for 20 to 30 minutes until firm.
  • Apply the final layer of frosting to the chilled cake. For the best color, let the frosted cake sit or refrigerate for at least 30 minutes to allow the cocoa pigments to deepen.

Notes

Color Maturation: Prepare the buttercream 24 hours ahead if possible. The black cocoa pigments deepen as they hydrate, shifting the color from dark brown to a true midnight black.
Sifting Technique: Always sift your black cocoa powder twice for both the batter and the frosting. It clumps easily and can leave pale specks if not properly aerated.
Temperature Control: Ensure your buttermilk and eggs are at room temperature. This allows the batter to emulsify correctly for a smooth, velvety texture.
Storage: Keep the cake in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days. Bring to room temperature for 2 hours before serving for the best texture.
