Transform humble cabbage into a restaurant-style side dish with these tender, crispy-edged roasted cabbage steaks. Perfectly seasoned and caramelized for a delicious low-carb treat!
Trim the stems off the cabbage heads, then slice each head in half through the core. Cut each half in half again so you end up with four thick slabs per cabbage, aiming for about 3/4 to 1 inch thick so they roast instead of collapsing.
Handle the slices like you would a good cut of meat, gently and confidently. If you keep a bit of the core on every piece, the layers stay stitched together instead of sliding apart.
Season and coat every leaf
Set the cabbage steaks on a baking sheet lined with parchment paper, leaving breathing room between pieces so hot air can circulate and brown the edges instead of steaming them.
Whisk the olive oil until it looks glossy and unified. Brush it over the tops, then shower on the salt, garlic powder, and paprika so the surface looks warmly tinted and well covered.
Flip each steak and repeat the brushing and seasoning on the second side, because the bottom deserves that flavor too. If you like a little heat, add a pinch of red pepper flakes to each one, just enough to tingle without taking over.
Roast hot for deep browning
Bake at 400°F in a preheated oven for about 25 minutes, until the leaves are browned with crisp edges and the center is tender when pierced. You’ll smell the garlic and paprika turning fragrant and sweet as the cabbage caramelizes, and that’s your cue you’re close, serve hot right out of the oven.
Notes
Crispy Edges Secret: Always slice straight through the core, leaving a triangular anchor on each piece so the layers roast as a single steak without falling apart.Moisture Control: Pat the cabbage very dry with paper towels after washing, especially in the folds, to prevent the leaves from steaming instead of caramelizing.Air Fryer Conversion: Cook the cabbage steaks at 375°F for 12 to 15 minutes, flipping once halfway, until bronzed and crisp.Nutrition information is estimated based on common ingredients and serving sizes and may vary.
