Equipment

  • 9×5-inch Loaf Pan
  • Box grater
  • Whisk
  • Silicone spatula
  • Wire cooling rack

Ingredients

For the cake:

  • 1 cup packed light brown sugar 213g
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter, melted 57g
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon kosher salt
  • 2 large eggs
  • 1 3/4 cups all-purpose flour 210g
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 cups grated carrots about 3 large carrots or 210g
  • 1/2 cup chopped toasted walnuts

For the optional cream cheese frosting:

  • 4 ounces cream cheese, softened 113g
  • 2 tablespoons butter, softened 28g
  • 3/4 cup powdered sugar 90g
  • 1/2 teaspoon vanilla extract

Instructions

Prep the pan and set your oven

  • Heat the oven to 350°F. Grease a 9x5-inch loaf pan and line the bottom and two sides with parchment paper, leaving a slight overhang for easy removal.
  • Lightly grease the parchment and dust the inside with a thin layer of granulated sugar. Tap out any excess to create a crackly shell during baking.

Build the batter, keep it tender

  • In a large bowl, whisk together the brown sugar, vegetable oil, melted butter, cinnamon, nutmeg, ginger, and salt until the mixture is glossy.
  • Add the eggs and whisk until the mixture is smooth and cohesive. Switch to a silicone spatula to stir in the flour, baking powder, and baking soda, stopping while a few dry streaks remain.
  • Gently fold in the grated carrots and toasted walnuts until just combined, ensuring the batter remains thick and not overworked.

Bake, cool, and finish

  • Spoon the batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
  • Cool the loaf in the pan for 10 minutes, then use the parchment sling to lift it onto a wire rack. Let the loaf cool completely to set the crumb.
  • For the frosting, beat the softened cream cheese and butter until smooth. Add the powdered sugar and vanilla, mix until creamy, and spread over the fully cooled loaf.

Notes

Internal Temperature Rule: To ensure the loaf is perfectly set without becoming dry, use an instant-read thermometer to aim for an internal temperature of 200°F to 205°F.
Sugar Crust Secret: Dusting the greased pan with sugar instead of flour creates a caramelized, crackly edge that provides professional texture and extra flavor.
Storage Tip: Keep the unfrosted loaf at room temperature for up to 4 days. If frosted, store in the refrigerator and allow slices to sit at room temperature for 15 minutes before serving for the best texture.
