- 1 tablespoon olive oil
- 4 cups broccoli florets
- 1 pound lean ground beef
- 1/2 cup chopped yellow onion
- 1-2 minced garlic cloves
- 1/2 cup shredded carrots
- 1 red bell pepper cut in thin slices
- 2 packages of beef top ramen
- toasted sesame seeds
Sauce:
- 1 1/2 cups beef broth
- 1/4 cup low sodium soy sauce
- 3 tablespoon light brown sugar
- 2 tablespoon honey
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon ground ginger
- 3 tablespoon corn starch
- pinch of red pepper flakes
Cook the Broccoli and Mix the Sauce
Heat olive oil in a large non-stick skillet over medium heat. Add the broccoli florets and cook for about 8 minutes, stirring occasionally, until bright green and tender-crisp. Transfer the broccoli to a plate and set aside.
In a medium bowl, whisk together the beef broth, soy sauce, brown sugar, honey, sesame oil, ground ginger, corn starch, and red pepper flakes. Stir until the mixture is smooth and the corn starch is fully dissolved.
Brown the Beef and Build the Base
In the same skillet, cook the ground beef over medium heat until no longer pink and nicely browned. Allow the meat to sit for a moment to achieve a caramelized edge before stirring.
Drain off any excess grease from the pan. Add the chopped onion, minced garlic, shredded carrots, and red bell pepper slices. Cook for 2 to 3 minutes until the vegetables are fragrant and slightly softened.
Simmer, Boil, and Finish
Return the cooked broccoli to the skillet and pour in the whisked sauce. Bring the mixture to a low simmer for about 5 minutes, stirring occasionally, until the sauce thickens into a shiny glaze that coats the beef and vegetables.
While the sauce simmers, boil the ramen noodles in a separate saucepan according to package directions, but stop 1 minute early so they remain firm.
Drain the noodles and add them directly to the skillet. Toss for 1 minute until the noodles are fully coated in the sauce. Garnish with toasted sesame seeds and serve immediately.
Noodle Texture: Undercook the ramen by 1 to 2 minutes so it finishes in the skillet without turning soft and bloated.
Flavor Development: Give the beef time to brown instead of constantly stirring. A little caramelization creates a much deeper savory base.
Storage & Reheating: Reheat leftovers with a tablespoon of water or broth to create steam and loosen the glaze.
