Equipment

  • Small saucepan
  • High-powered blender
  • Fine-Mesh Sieve

Ingredients

  • 1 Teaspoon Butter
  • 1 Banana, sliced
  • 1/2 Teaspoon Cinnamon
  • 1 Tablespoon Coconut Sugar
  • 1 Cup Milk of Choice
  • 8 Ounce Cold Brew
  • 1 Handful Ice Cubes

Instructions

Brown the Butter and Build the Banana Base

  • Set a small saucepan over medium heat and add the butter. Let it melt and continue cooking just until it turns lightly browned and smells nutty.
  • Add the banana slices to the pan with the coconut sugar, cinnamon, and a pinch of flaky sea salt, making sure the slices are coated in the butter and sugar mixture.

Caramelize and Cool

  • Cook the banana mixture for 4 to 5 minutes over medium heat until the slices soften, the sugar turns syrupy, and the bananas look glossy and deeply golden.
  • Take the pan off the heat and let the caramelized banana cool slightly to prevent the milk from curdling and to keep the drink cold.

Blend the Banana Milk

  • Add the milk of choice and the slightly cooled caramelized bananas to a high-powered blender. Blend until the mixture looks completely smooth, creamy, and lightly frothy.
  • If you notice any small bits left behind, pour the mixture through a fine-mesh sieve for a silky, café-worthy texture.

Assemble the Latte

  • Fill a tall glass with the ice cubes, then pour in the cold brew coffee.
  • Finish by pouring the frothy banana milk over the coffee. The layers will swirl together into a creamy iced latte.

Notes

Temperature Tip: Do not blend piping hot caramelized bananas with cold milk, as this can cause dairy milk to curdle and leaves the drink oddly lukewarm. Let the bananas cool slightly first.
Texture Tip: For the smoothest, barista-quality mouthfeel, always strain the blended banana milk through a fine-mesh sieve to catch any fibrous bits.
Coffee Tip: Dark roasts or cold brew work best. Their earthy, chocolatey notes balance the sweet caramel banana flavors far better than bright, fruity beans.
No-Blender Method: Mash the cooled caramelized banana into a fine paste with a fork, add it to a sealed mason jar with your milk, shake vigorously for 60 seconds, and strain before serving.
