Balela Salad Recipe
Rebecca Blumer
This Balela Salad is a bright Middle Eastern bean salad with chickpeas, herbs, tomatoes, and a tangy lemon sumac dressing. It's fast, make-ahead friendly, and the flavors get even better as it rests.

For the Salad
- 3 1/2 cups cooked chickpeas (or 2 15-ounce cans chickpeas), drained and rinsed
- 1/2 green bell pepper chopped
- 1 jalapeno finely chopped (optional)
- 2 1/2 cups grape or cherry tomatoes halved if you’d like (or you can leave them whole)
- 1/2 cup sun-dried tomatoes
- 3-5 green onions chopped (both white and green parts)
- 1/3 cup pitted Kalamata olives
- 1/4 cup pitted green olives
- 1/2 cup chopped parsley leaves
- 1/2 cup chopped mint or basil leaves
For the Dressing
- 1/4 cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- 2 tablespoons lemon juice
- 1 clove garlic minced
- 1 teaspoon sumac
- 1/2 teaspoon Aleppo pepper
- 1/4 to 1/2 teaspoon crushed red pepper (optional)
- Kosher salt
- Black pepper
Prepare the Zesty Sumac Dressing
Warm the olive oil briefly in a small pan over low heat, then stir in the sumac and Aleppo pepper for about 30 seconds before transferring the oil to a bowl or jar with the vinegar, lemon juice, garlic, crushed red pepper (if using), kosher salt, and black pepper. The spices should smell fragrant almost immediately, and the warm oil helps unlock a fuller aroma without cooking the dressing.
Whisk or shake the dressing until everything is fully combined. It should look slightly thickened and uniform, not like separated oil floating over the acidic ingredients.
Combine the Salad Ingredients
Add the chickpeas, bell pepper, jalapeno, tomatoes, sun-dried tomatoes, green onions, Kalamata olives, green olives, parsley, and mint or basil to a large bowl. Use a bowl with enough room to toss freely so the tomatoes stay intact and the herbs do not get mashed down.
Dress and Rest the Salad
Pour the dressing over the salad and toss gently until the beans, herbs, and vegetables are evenly coated. You want every spoonful glossy and seasoned without crushing the chickpeas or bruising the herbs.
Let the salad sit for 30 minutes before serving, or cover and refrigerate it until mealtime. As it rests, the scent becomes more cohesive, with bright notes of mint and lemon moving to the front.
Give the salad one more toss and taste for salt, pepper, or lemon just before serving. The flavor should taste brighter and more settled than it did at first mix, which is your sign the resting step did its job.
Texture tip: For the best texture, cut vegetables to roughly the size of the chickpeas so each bite feels balanced.
Prevent a watery salad: If your tomatoes are very juicy, consider removing some of the seeds and liquid before adding them to keep the dressing from getting diluted.
Storage: Store the salad in an airtight container in the refrigerator for 3 to 5 days. Be sure to give it a good stir before serving again.
Freezing: This salad is not suitable for freezing. The vegetables will become watery and lose their crisp texture once thawed.
