Equipment

  • Large saucepan
  • Whisk
  • Baking Sheet

Ingredients

  • 1 cup Water
  • 3 tablespoons Cornstarch
  • 2.5 cups Frozen strawberries thawed and cut into bite size pieces
  • 0.75 cup White sugar

Instructions

Prep the Cold Slurry

  • In a large saucepan, whisk together the water and cornstarch until the mixture is smooth, milky, and free of any dry lumps at the bottom.

Combine, Macerate, and Start the Heat

  • Stir the thawed strawberry pieces and sugar into the slurry. As you begin to heat the mixture, the sugar will pull the juices from the fruit, creating a natural strawberry base.

Simmer Until Thick and Glossy, Then Cool Completely

  • Cook the mixture over medium heat for approximately 10 minutes. Stir frequently, ensuring you reach the corners of the pot, until the liquid turns from cloudy to shiny and thickens into a spoon-coating consistency.
  • During the final minute of simmering, fold in the vanilla bean paste, sea salt, and lemon zest to enhance the aromatic strawberry flavor.
  • Remove from heat and let the filling cool completely before use. To speed up the process, spread it thin on a rimmed baking sheet and refrigerate until it is cold and jammy.

Notes

The Buttercream Dam: To prevent the filling from leaking out of the sides of your cake, pipe a sturdy ring of stiff buttercream around the edge of the layer before spooning the strawberry filling into the center.
Preventing Sogginess: Seal your cake sponge with a thin crumb coat or a light skim of buttercream before adding the filling to create a moisture barrier.
Heat Management: Be careful not to overcook the filling once it has thickened and turned glossy. Prolonged high heat can eventually break down the cornstarch bonds, causing the filling to become watery again.
Storage Tip: Keep the filling in an airtight container in the refrigerator for up to 5 days. Watch for changes in aroma or bubbling as signs of spoilage.
