Bakery-style Rhubarb Muffins With Cinnamon Streusel

These bakery-style rhubarb muffins feature a tender, moist crumb balanced by tart fruit and a crunchy, cinnamon-spiced streusel. A high-heat start ensures perfectly domed tops every time.
Heat your oven to 350 degrees F (175 degrees C) and allow it to stabilize for several minutes to ensure even baking.
Grease two 12-cup muffin pans or line them with paper liners, ensuring the corners are well-covered.
Mix the batter, gently
In a medium mixing bowl, whisk together the flour, baking soda, baking powder, and salt until the mixture is uniform and airy.
In a separate large bowl, beat the brown sugar, buttermilk, vegetable oil, egg, and vanilla extract until the mixture is smooth, glossy, and emulsified.
Add the dry ingredients to the wet ingredients and fold by hand just until the flour streaks disappear. The batter should remain thick and slightly lumpy.
Gently fold in the diced rhubarb and chopped walnuts, being careful not to overmix to keep the fruit suspended and the crumb tender.
Spoon the batter into the prepared muffin cups, filling them nearly to the top for a better rise.
Streusel and bake
In a small bowl, stir the white sugar, melted butter, and ground cinnamon together until the texture resembles damp sand.
Sprinkle approximately 1 teaspoon of the streusel mixture over each muffin to create an even coating.
Bake for approximately 25 minutes, or until the muffin tops spring back when lightly touched.
Cool and enjoy
Allow the muffins to rest in the pans for 10 minutes to set the crumb before serving warm or transferring to a wire rack to cool completely.
