Equipment

  • Muffin Tin
  • Paper liners
  • Mixing Bowls
  • Cooling Rack

Ingredients

  • 4 cups (480g) all-purpose flour
  • 1.5 cup (300g) granulated sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 0.25 tsp nutmeg
  • 4 large eggs
  • 1 cup (240ml) whole milk or 2% milk
  • 0.5 cup (118ml) vegetable oil
  • 4 Tbsp (57g) unsalted butter, melted and cooled
  • 2 tsp vanilla extract
  • 2 cups (340g) semi-sweet chocolate chips, divided

Instructions

Mix the Dry Bowl and Prep the Flavor

  • In a medium mixing bowl, stir together the all-purpose flour, granulated sugar, baking powder, salt, and nutmeg until the color looks even and the nutmeg is no longer in little specks. Set it aside so it is ready to meet the wet ingredients fast.
  • In a small pan, brown the 4 Tbsp (57g) unsalted butter, letting it foam and turn a deep golden color with a nutty, toasted smell. Pour it into a heat-safe bowl and let it cool so it is not hot when it hits the eggs, you want warm and fragrant, not scrambling.

Build the Wet Base, Then Combine Gently

  • In a larger mixing bowl, whisk the eggs until they look loose and glossy, then whisk in the milk, vegetable oil, cooled brown butter, and vanilla extract. The mixture should look silky and unified, not separated into streaks.
  • Add the dry ingredients gradually, and fold just until you stop seeing dry pockets, the batter will look very thick and slightly lumpy. Stir in 1 1/2 cups of the semi-sweet chocolate chips, keeping the mixing gentle to avoid excess gluten development.

Rest, Portion, and Bake for Tall Domes

  • Cover the bowl with a towel and rest the batter overnight in the fridge for the biggest bakery-style dome, this is where the flour hydrates and the texture turns extra tender. If you are short on time, give it at least 15 to 60 minutes, and while it rests, preheat the oven to 425 F / 220 C.
  • Line a 12 count muffin tin with 6 paper liners, filling only every other well for better airflow and rise. Scoop 6 to 8 heaping tablespoons of batter into each liner, then top with the remaining chocolate chips and a generous sprinkle of sanding sugar.
  • Bake one pan in the center of the oven for 7 minutes at 425 F / 220 C, then without opening that door too long, turn the temperature down to 350 F and bake for 12 to 16 minutes. You will know they are done when the tops look set and deeply golden, and a toothpick test comes out clean.

Cool and Repeat Like a Bakery

  • Let the muffins cool in the pan for 10 minutes so the crumb finishes setting, then move them to a cooling rack to keep the bottoms from steaming soft. Before the next batch, bump the oven temperature back up to 425 F so the high-heat lift works again.

Notes

Measuring Flour: Weigh your flour or use the spoon-and-level method to avoid packing it, which is the fastest road to dry muffins.
Temperature: Use room temperature eggs and milk so they emulsify smoothly into a unified base with the oil and butter.
Baking Pan Setup: Fill only every other cup in your muffin tin to allow hot air to circulate, giving crisper edges and a better rise.
Storage: Keep cooled muffins in an airtight container at room temperature. Place paper towels above and below the muffins to absorb excess moisture and keep the tops crisp.
