Rebecca Blumer

Serving dish
- 1 8-ounce round brie cheese chilled
- Honey for drizzling
- Chopped toasted pecans for sprinkling
- Flaky sea salt for sprinkling, optional
For serving
- Fresh rosemary or thyme sprigs for garnish
- Sliced baguette, crostini, or crackers
- Apple slices
- Grapes
Heat the oven to 350°F and cover a baking sheet with parchment paper. The parchment should lie flat enough to support the cheese while still leaving edges you can grasp for transfer.
Set the chilled brie in the center of the prepared sheet and bake for 8 to 10 minutes. The wheel is ready when the top feels warm and pillow-soft at the center with a very gentle press.
Lift the parchment carefully and slide the softened wheel onto a serving dish. Handle it gently because the warmed rind is delicate and the cheese beneath it is loose and hot.
Finish the brie with honey, chopped toasted pecans, and flaky sea salt, if using. Add rosemary or thyme, then serve while the center is soft with baguette, crostini or crackers, apple slices, and grapes.
Doneness cue: Gently press the top center of the rind. It should feel warm and pillow-soft like a filled cushion. Avoid piercing the rind with a knife to prevent the melted cheese from leaking.
Serving timing: Baked brie stays molten and scoopable for 10 to 15 minutes after leaving the oven before slowly thickening into a soft spread.
Reheating: Place leftover brie in a small oven-safe dish and warm gently in a low to moderate oven until softened. Avoid high-power microwave heating to prevent oily separation.
