Ingredients
 

  • 2 lb chicken thigh fillets

Marinade:

  • 3 large garlic cloves minced
  • 1 tbsp white wine vinegar
  • 3 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 3 tbsp Greek yogurt
  • 1 1/2 tbsp dried oregano
  • 1 tsp salt
  • Black pepper

Tzatziki:

  • 2 cucumbers
  • 1 1/4 cups Greek yoghurt
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 garlic clove minced
  • 1/4 tsp salt
  • Black pepper

Salad:

  • 3 tomatoes desseeded and diced
  • 3 cucumbers diced
  • 1/2 red spanish onion peeled and finely chopped
  • 1/4 cup fresh parsley leaves
  • Salt and pepper

To Serve:

  • 4 to 6 pita breads or flat breads

Instructions
 

Marinate the chicken

  • In a ziplock bag, combine all the Marinade ingredients and squish the bag gently until the mixture is evenly mixed and glossy. Add the chicken thigh fillets, seal the bag, and massage so every piece is thoroughly coated.
  • Allow the chicken to marinate for at least 2 hours, ideally up to 12 hours. Avoid marinating longer than 24 hours to maintain the best meat texture.

Make thick tzatziki and the salad

  • Prepare the tzatziki by cutting the cucumbers lengthwise and scraping out the seeds. Grate the cucumber, then squeeze it firmly in a tea towel to remove all excess moisture. Mix with the remaining tzatziki ingredients and let sit for 20 minutes.
  • Toss the diced tomatoes, cucumbers, onion, and parsley together in a bowl. Wait until just before serving to add salt and pepper to keep the vegetables crunchy.

Sear the chicken, then rest

  • Heat an oiled outdoor grill or fry pan over medium-high heat. Lift chicken from the marinade and cook for 2 to 3 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  • Transfer the cooked chicken to a plate, cover loosely with foil, and let it rest for 5 minutes to keep the juices inside the meat.

Assemble your gyros

  • Slice the rested chicken thinly on a slight diagonal. For the ultimate restaurant finish, toss the sliced strips in a smoking hot pan for 60 seconds with a teaspoon of honey and a squeeze of lemon juice until the edges are dark and caramelized.
  • Warm your pita bread for 30 seconds until flexible. Layer the fresh salad down the middle, add the charred chicken, and top with a generous spoonful of tzatziki. Roll tightly in parchment paper and serve immediately.

Notes

Flavor Secret: Add a tiny pinch of ground cinnamon to your marinade for that subtle, restaurant-style warmth and aroma.
Texture Tip: Always squeeze the grated cucumber in a towel until bone-dry. This prevents your tzatziki from turning watery and keeps it thick and creamy.
Reheating Instructions: Skip the microwave. Reheat the meat in a hot skillet with a tiny splash of water and a lid for one minute, then uncover to let the moisture evaporate and the edges crisp up again.
Safety Tip: Use chicken thighs instead of breasts whenever possible. They are much more forgiving and stay juicy even during the high-heat flash-sear step.
