Silicone Pastry Brush
- 1 lb green cabbage
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon whole grain dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon black pepper
Prep the cabbage
Set the cabbage on a cutting board with the stem end steadying it underneath, then use a sharp knife to slice from top to bottom straight through the core. Cut the 1 lb green cabbage into 4 wedges, each about 1 inch (2.5 cm) thick, making sure every piece keeps a section of the core attached so the leaves stay neatly together.
Arrange the wedges in a single layer in the air fryer basket as you work. Give each piece a little breathing room so the hot air can move around the sides instead of trapping steam.
Mix and brush the glaze
In a small bowl, stir together the olive oil, whole grain dijon mustard, apple cider vinegar, garlic powder, smoked paprika, fine sea salt, black pepper, and 1/2 teaspoon maple syrup.
Brush the glaze generously over both sides of each wedge, nudging it into the little folds between the leaves. This adds flavor and protects the outer layers from drying out too quickly.
Air fry until crisp and tender
Finish with the savory topping
At the 8-minute mark, pause the air fryer and sprinkle the wedges with 1 to 2 tablespoons freshly grated Parmesan or nutritional yeast. Return them to the air fryer for the remaining 2 minutes, just until the cheese melts and turns golden in spots.
Cutting Tip: Leave a part of the core attached to each wedge so the leaves stay anchored during cooking. Cut the wedges to a uniform 1-inch thickness for even cooking from edge to center.
Storage & Reheating: Store leftover cabbage wedges in an airtight container in the refrigerator for up to 3 days. Reheat them in the air fryer at 350°F (175°C) for 3 to 4 minutes instead of microwaving to keep them crisp.
Variations: Red or purple cabbage can be cooked with the exact same time and temperature as green cabbage. Savoy and Napa cabbage are more delicate and will require a slightly shorter cooking time.
